Creamy Tuscan Garlic Chicken

This was quick and delicious!!😍 1 1/2 lbs boneless chicken breast, thinly sliced 2 Tbsp olive oil 1 cup heavy cream 1 tsp garlic powder 1 tsp Italian seasoning 1/2 cup Parmesan cheese 1 cup spinach, chopped 1/3 cup sun dried tomatoes Instructions 1. In a large skillet add olive oil and cook chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. 2. Add The heavy cream, chicken broth, garlic powder, Italian seasoning, and Parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sun-dried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back into the pan until fully cooked.

I am a step mom. Many, many, many years ago when we were deciding on what the kids should call me, we came up with Mimi. This was before Mimi was popular for grandmas to be called. 😂 We also wanted something that wasn’t “mom” out of respect for their mom. But we wanted them to call me something other than my first name, out of respect for me. So Mimi it was. Even my own biological kids call/ed me Mimi. 😍 Now, King, our foreign exchange student, has adopted the name Mimi for me and I love it!!❤️ He is such a sweetheart and fits so well with our family. I’m proud to have him call me Mimi.
